Your Cocktail

Ready to make your cocktail? Before you begin, be sure to source the starred items below and get your glassware ready - everything else is provided for you.

Ingredients

  • 50ml Cooper King Dry Gin

  • 50ml Yorkshire Wolds Spiced Apple Juice

  • 12.5ml vanilla syrup

  • * Whole star anise, to garnish

Glassware: * Martini glass (ideally chilled)

Method: Reserve the star anise for garnish. Add the rest of the ingredients to a cocktail shaker, add plenty of ice and shake vigorously until chilled. Strain into a chilled martini glass. Garnish with the star anise. For a longer drink, you can top up with Indian tonic water.

You can also serve this drink hot - simply treat as you would mulled wine. Reserve the star anise for garnish, add the rest of the ingredients and an additional 20ml of water per serve to a pan. Gently heat on the hob until warm. Strain, garnish and enjoy.

Cocktail History

The gin martini has a complex history, often linked to the Martinez cocktail from the 1860s or Martini vermouth from Italy. By the 1920s, it had evolved into the classic mix of gin and dry vermouth, a symbol of sophistication and simplicity.

Over the years, it became a favourite of cultural icons, from Ernest Hemingway to James Bond. In 1996, the martini took a fruity turn with the Apple Martini, created at Lola’s in West Hollywood. This sweet variation brought a modern twist to the martini’s legacy.

The Cooper King version - developed by our in-house mixologist Laura - introduces a winter twist. The warmth from our Dry Gin is complemented by a touch of vanilla and a luxurious spiced apple juice from Yorkshire.

Ingredient Focus: Cooper King Dry Gin

Rich cardamom notes married with juicy citrus and floral layers of Yorkshire honey deliver a fresh, vibrant gin of exceptional character. It is hand distilled, bottled and labelled at the distillery, using 100% renewable energy.

The honey used in this gin is produced on site, courtesy of the distillery beehives. These are cared for by distillery founder Abbie’s father and resident beekeeper, Graham.

Positive impact. This is England’s first carbon-negative gin, meaning each bottle removes 1kg more carbon dioxide from the atmosphere than it emits. Each bottle also plants 1 square metre of UK woodland, as we donate £1 from every sale to our charity partner, Yorkshire Dales Millennium Trust.

Located near Malton (just 17 miles from the distillery), this independent, family-owned venture is run by Jane and Jon. They pride themselves on using 100% English grown, traditional varieties of apples and other quintessentially English fruit to produce their delicious juices.

Fruits are picked, foraged and bought as locally as possible, before being juiced at their ripest and juiciest. Sustainably produced, in small batches using simple, traditional methods, their juices are full of natural flavours and goodness.

They taste simply of the fruit they are made from and are bursting with flavours of the English seasons.
