Double Matured: New Oak into Armagnac

RELEASE NOTE

Welcome to the Cask Series of whiskies; a collection of unique expressions, each celebrating the marriage of our distinctive spirit with specially selected, individual casks.

For this expression, we selected a new French oak cask for the first 5 months of maturation, before transferring to a small, first-fill Armagnac cask for the remainder of the maturation period. The entire cask has been disgorged and bottled at cask strength, without chill-filtration or colouring. Each of the 139 bottles has been hand-filled and individually numbered.

This is the first publicly available, double matured whisky to be launched from the distillery.

Positive Impact. £5 from every bottle is donated to our charity partner, Yorkshire Dales Millennium Trust, to fund life-changing apprenticeships for young people in rural areas, to help protect vital UK habitats (YDMT Registered Charity No. 1061687).

DISTILLER’S COMMENTS

“This is a dram to savour; it develops wonderfully with time in the glass. Five months in new oak imparted that remarkable colour, along with a rich bouquet of oak spice and cedar wood. Moving the spirit into an Armagnac cask allowed for a gentle continuation to maturity. A generous helping of creamy vanilla and muscovado sugar softens the spice, giving way to baked peach and cherry blossom. A splash of water is your friend here, calming the tannin to reveal banana loaf, dried fig and rum-soaked raisins, culminating in a luxuriously long and complex finish.” - Abbie Jaume, Head Distiller

TASTING NOTES

  • Nose: baked peach, muscovado sugar, oak and cherry blossom.

  • Taste: vanilla pods, rum-soaked raisins, soft spice and leather.

  • Finish: long and warming, with dry oak tannin.

  • Short: neat, or with a generous dash of water.
