RELEASE NOTE
Welcome to the Cask Series of whiskies; a collection of unique expressions, each celebrating the marriage of our distinctive spirit with specially selected, individual casks.
For this expression we selected a small, Australian tawny (fortified wine) cask for the first 3 years, 9 months of maturation, before transferring to a small, peated whisky cask for the remainder of the maturation period. The entire cask has been disgorged and bottled at cask strength, without chill-filtration or colouring. Each of the 90 bottles has been hand-filled and individually numbered.
Positive Impact. 3% from every bottle sold is donated to our charity partner, Yorkshire Dales Millennium Trust, to fund life-changing apprenticeships for young people in rural areas, to help protect vital UK habitats (YDMT Registered Charity No. 1061687).
DISTILLER’S COMMENTS
“This whisky holds a special place in our story; it’s matured in an Australian tawny cask from the very region in Tasmania where our journey began. Once the tawny imparted its deliciously intense fruit and spice, we moved the whisky into a refill bourbon cask - that previously held peated single malt whisky. The result is a rich, tart and spicy dram, jam-packed with dried orange, chocolate cherries and toffee, with whispers of coal fire, tobacco and wood smoke.” - Abbie Jaume, Head Distiller
TASTING NOTES
Nose: chocolate-coated cherries, wood smoke and sea spray.
Taste: raisins, sweet malt, ginger and soft peat.
Finish: long and lingering with dried fruit and toffee.
SUGGESTED SERVE
Short: neat, or with a dash of water. Pairs well with dark chocolate, salty cheese or Stilton.
